apple cranberry quinoa salad
This beautiful, colorful salad is the perfect side dish to bring to a party or serve your guests.
It also works as a great base, so add some grilled chicken if you want an easy lunch or dinner.
This dish is made with a homemade dressing, so it is incredibly nutritious and full of flavor.
INGREDIENTS
For the salad:
1/2 cup uncooked quinoa
1 cup vegetable or chicken broth (we love and recommend Kettle & Fire Chicken Bone Broth)
2 cups baby spinach, chopped
1 apple, diced
1/3 cup dried cranberrie
1/4 cup sliced almonds
1/4 cup crumbled goat cheese
For the dressing:
3 T. extra virgin olive oil
1 1/2 T. apple cider vinegar
2 tsp. pure maple syrup
1/4 tsp. dijon mustard
sea salt, to taste
DIRECTIONS
Combine the quinoa and broth in a small pot and cook according to the quinoa package directions. Spread out on a large platter or baking sheet to let cool.
While the quinoa is cooling, make the dressing. In a small bowl or jar, stir or shake all the dressing ingredients together. Season with salt, to taste.
In a large bowl, toss together the salad ingredients. Drizzle with the dressing and mix again until combined.
Stores well in the refrigerator for a few days. Add a protein like grilled chicken to make it a full meal!
