My Story

 

 

Hi! I’m Stacy anderson.

I am a celiac who lived many years eating gluten and being exposed to it without even knowing. I, like most individuals who have gluten issues, suffered from a long list of health issues. I had irritable bowel syndrome (IBS), acid reflux (GERD), weight gain, severe mood swings, terrible acne and white bumps (called chicken skin) on my arms. I had no idea any of these issues had something to do with the food I ate. I was unhappy, living unknowingly with a gluten intolerance called Celiac Disease.

 

I was led to believe these were all separate health issues, possibly related to my extreme workout schedule and schoolwork load, in addition to my recent diagnosis of Hashimotos Hypothyroidism. My doctors ended up putting me on medication and started treating my symptoms.

With the medication, I did start to experience some relief, but I was not even close to feeling like my happy, healthy self again.

After many years of failed Western medicine attempts, I knew there must be an answer somewhere. This yearning to find a way back to health, drove me to learn more by registering in Nutrition School. Through my education and research, I thought there may be a correlation of my symptoms to gluten, and started to remove it from my diet. After identifying what could be potential exposure, even in micro amounts, I became keenly aware of the overwhelming presence of gluten in my day-to-day life. Lifestyle changes began to take place, and I removed it from my diet completely.

 

I still make mistakes, even today, but I now have practices to reverse the inflammation and damage I experience when gluten is in my system.

As a result of my own health journey, I have become a Gluten Free Expert.

I am here to share my journey, my lessons, my knowledge, and my struggles with others. The impact of a gluten free lifestyle is undeniably amazing for someone who has a gluten intolerance or Celiac disease.

As a nursing student studying for my BSN in college; I never knew I would switch gears to teach nutrition and help people heal via food and knowledge instead of through primarily western medicine. This is where I feel the change really occurs by identifying the cause and converting to a healthier lifestyle through small daily changes.
