the best energy balls
We found this recipe on the back of a bag of flaxseed meal and have never looked back! They’re easy to modify as needed and pack an extra punch with the fiber in the flaxseed. These are absolutely a snack staple…you may want to double or triple the recipe!
INGREDIENTS
1 cup rolled oats
1/4 cup mini chocolate chips (choose dairy free, gluten free if needed)
1/2 cup ground flaxseed meal
1/2 cup peanut butter (a natural, more runny kind works best)
1/3 cup honey or maple syrup
1 tsp. vanilla extract
DIRECTIONS
Mix all ingredients together in a mixing bowl.
Place in refrigerator for 30 minutes or more to slightly harden.
Roll into balls and store in an airtight container in the refrigerator.
Makes approximately 17 balls (depending on size).
