healthy chicken fried rice

This recipe is guaranteed to be on constant rotation like it is in our home! It’s simple ingredients, easy to make, and even kid-approved. Plus, its way healthier than take-out chicken fried rice (and oh so easy to make gluten-free)!

INGREDIENTS

1 cup uncooked rice (any type you prefer)

3 chicken breasts, cooked and shredded (I actually use chicken thighs instead!)

1 onion, diced

2 gloves garlic, minced

1/2 cup frozen peas

4 carrots, diced

2 eggs (I usually add 3-4 for extra protein)

3 tablespoons sesame oil

1/4 cup soy sauce (if you need gluten-free, be sure to buy a specific gluten-free brand!)

INSTRUCTIONS

  1. Prepare 1 cup of rice, as instructed on rice packaging.

  2. Meanwhile, heat sesame oil in a large skillet over medium heat. Add onion, garlic, peas, and carrots. Cook for 5-7 minutes.

  3. Crack eggs into the pan and scramble, mixing with the vegetables.

  4. Add rice, chicken, and soy sauce to pan. Stir to combine. Serve!
