Cinnamon maple roasted pumpkin seeds

This recipe makes a great snack all year round. Sure, you could go buy some pumpkin seeds, but why not quickly make at home so you know your ingredients are clean and healthy?

Plus, pumpkin seeds have so many health benefits, you can feel good snacking on more than just a few of these.

INGREDIENTS

3 cups fresh dried pumpkin seeds

¼ cup butter, melted

4 T. pure maple syrup

1 ½ tsp. ground cinnamon

½ tsp. ground ginger

1/8 tsp. ground nutmeg

1/8 tsp. ground cloves

pinch of salt

INSTRUCTIONS

  1. Preheat oven to 275 degrees.

  2. Put the dried seeds in a bowl and pour the melted butter and maple syrup over the seeds. Stir to coat well.

  3. In a separate small bowl, mix all the spices together. Pour the spices over the seeds and mix well.

  4. Spread the seeds onto parchment lined baking sheets and sprinkle lightly with salt. (Tip: Our favorite baking sheet is this one and is in the picture above - no parchment paper needed!)

  5. Put in your 275 degree oven for 30-45 minutes or until the seeds look golden brown, stirring every 15-20 minutes.

  6. After the seeds have cooled, break up with your hands as needed.

  7. Store in an airtight container at room temperature.
